- The garlic butter adds richness without masking the beef flavor.
- The recipe works with several cuts of steak.
- It can be prepared on the BBQ or in a cast-iron skillet.
Ingredients
- 4 beef steaks, about 2.5 to 4 cm (1 to 1.5 inches) thick
- 2 to 3 tbsp Joe seasoning by Austin Blends
- 1 tbsp cooking oil
- 60 ml (1/4 cup) softened butter
- 1 small clove garlic, finely minced
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- Prepare. Remove steaks from the refrigerator while the BBQ preheats. Pat their surface dry with paper towels.
- Preheat. Heat the BBQ to 230 to 260 °C (450 to 500 °F). Clean and lightly oil the grates.
- Season. Lightly brush the steaks with oil, then sprinkle Joe seasoning on both sides. Press gently to make it adhere.
- Prepare the butter. Mix the softened butter with garlic and parsley. Set aside at room temperature.
- Grill. Place the steaks on the hot BBQ. Grill until a nice crust forms, then flip them to continue cooking.
- Check. Insert a digital thermometer from the side into the thickest part. Aim for at least 63 °C (145 °F) for medium-rare, 71 °C (160 °F) for medium, or 77 °C (170 °F) for well-done.
- Add butter. Place a small amount of garlic butter on each steak while it's still hot.
- Rest. Let the steaks rest for 5 to 10 minutes before slicing to retain as much juice as possible.

Our tips
- Pat the meat dry before seasoning for a better crust.
- Use steaks of similar thickness so they cook at the same rate.
- Avoid constantly moving the steaks while cooking.
- Check the temperature from the side to more easily reach the center of the meat.
- Don't skip resting after cooking: it helps keep the meat juicy.
Other ways to cook them
- In a pan: Heat a cast-iron skillet over medium-high heat with a little oil. Sear the steaks on both sides, then reduce the heat slightly until the desired internal temperature is reached.
- In the oven: First sear the steaks in an oven-safe pan, then finish cooking at 205 °C (400 °F) until the desired internal temperature.
- In an air fryer: Preheat to 200 °C (390 °F), then cook the steaks, flipping them halfway through. Check the internal temperature rather than relying solely on time.

Storage
Refrigerator: Store leftovers in an airtight container for up to 3 days.
Freezer: Wrap cooled steaks individually and store for up to 2 months.
Reheating: Gently reheat in a pan over low heat or in an oven at 150 °C (300 °F). Avoid high heat, which could dry out the meat.
Frequently asked questions
Which cut of beef is best?
Ribeye, sirloin, filet mignon, and flank steak are excellent choices. Most importantly, choose a cut that is thick enough to easily control the cooking.
Do I need to add salt?
Not automatically. Joe already seasons the meat. It's best to taste the steak before adding extra salt.
How do I know if the steak is ready?
A digital thermometer remains the most reliable method. Insert it into the thickest part without touching bone or a very fatty area.
Can I season the steaks in advance?
Yes. You can apply Joe a few hours before cooking and keep the steaks covered in the refrigerator. Pat away any excess moisture before grilling.
Why is it important to rest the steak?
Resting allows the heat to redistribute and helps retain more juice when slicing the meat.
